Every mother deserves to be treated with so much love on Mother’s Day and I think making her favorite cake is a great way to show her how much you love her.
This lemon jello cake is a favorite of mine, it’s very easy to make and is super moist and lemony. And what a better to show your love than with food, right?
Here’s the recipe for you.
CAKE
1 super moist lemon cake mix (Betty Crocker is best)
4 large eggs beaten
1 1/3 cup water
2/3 cup oil (I used Canola Oil)
1 pkg. lemon jello (3oz)
ICING
1 1/2 cup powder sugar
Juice of 2 lemons
DIRECTIONS
1. Preheat oven to 350*
2. Spray a Bundt pan with nonstick spray and sprinkle with flour to coat the pan.
3. In a bowl, mix the cake mix and jello, add the water, oil and beaten eggs.
4. Pour into Bundt pan.
5. Bake at 350* for 40 minutes.
6. When cake is done, test with toothpick and make sure it is clean, if not cook 3-5 minutes longer.
7. Wait about 6-8 minutes and then invert cake onto cake stand.
8. Prick the cake all over with fork or wooden skewer while the cake is still warm.
9. Pour the lemon icing on top.
ICING
In a bowl, mix powdered sugar and lemon juice until smooth.
You'll be ready to enjoy this yummy cake within one hour. I hope you give this cake a try and enjoy its refreshing lemon taste.
This cake can be made anytime of year, really. It is very refreshing at summertime and very uplifting at winter time.
